I’m Smoking a Pre-Thanksgiving Turkey

We are going to my brother’s house this Thanksgiving so while I won’t be able to work the bird that day, I’ve
decided to purchase a smaller Turkey (10-12 lbs) this weekend and smoke it as a pre-Thanksgiving event.
I was torn between using the kamado or the Memphis wood-fired grill but it looks like I’m rolling Memphis as
Steve Raichlen (whose recipe I’m using) uses one in his Project Smoke segment (see below).
I’m planning on brining on Saturday, smoking on Sunday. Details to follow!

Today was the first day of Autumn in Westchester County (80 degrees and not a cloud in the sky, no complaints!) so we bid a fond farewell to summer.

To celebrate the passing season, I present a new friend. Is it a Tesla? A DeLorean? Something alien from the planet Altair IV?

All I know is that it does a damn good job at searing a thick ribeye from Whole Foods!

Memphis Grill Review – Steve Raichlen Rocks a Tri-Tip Steak on the Memphis Grill – Curto’s

When it comes to grilling (or smoking) when Steve Raichlen speaks, I listen. Intently.

Steve is now using the Memphis wood fired grill on his new show “Project Smoke” and in the video below you will see him use the Memphis as his tool to tackle the West Coast-based tri-tip steak. This is a cut indigenous to SoCal and for some reason has been very slow to migrate eastward (I even asked my guy Mini at Mini Meats in Bronxville about the cut but he said it’s infrequently available).

Anyway, watch Steve handle the tri-tip with his deft touch on the Memphis and look for more Memphis Grill content coming soon on the Curto’s blog…
